  • Ingredients

    Oil

    Onion, chopped

    2tsp Garlic, minced

    2tsp Ginger, chopped

    1tsp Cumin, ground

    1tsp Turmeric, ground

    Dried chilli flakes

    400g tomatoes, chopped

    1 Cauliflower, chopped

    400g Coconut milk

    100g Dried Chickpeas, soak

    40g Peas (10g if dried)

    Method

    For dried chickpeas and peas, simmer for 45mins or soak overnight with a pick of salt and bicarb.

    Fry off onion, garlic and ginger. Add spices, stir.

    Add tomatoes, cauliflower, chickpeas, coconut milk, simmer until cauliflower is cooked (15 mins). Add peas cook for a further 5 mins and serve.

  • Ingredients

    2 cups of mixed nuts

    1/2 cup sunflower seeds

    1/2 cup pepitas

    3tbsp chia seeds

    1 cup coconut flakes

    1/4 cup coconut flour

    2tsp nutmeg

    2tsp cinnamon

    1/4 coconut oil

    Method

    1. Crush mixed nuts

    2. Combine all ingredients and add oil

    3. Cook on low heat on flat tray for 1 hour.
